I've successfully installed the 6ch energy meter, but I'm a little bit baffled why some Power reportings are negative, but the actual consumption / current is actually correct / positive... I 100% made sure the clamps are the right way around, I triple checked them: The energy flows in the arrow direction.

The reference voltage / the device is powered from phase 1, if that makes a difference.

Also, you cannot turn the probes the wrong way around - they are coils reacting to the magnetic field around the wire. They behave the same no matter how you turn them :-)
You cannot use a single phase meter on different phases. The circuits you want to monitor need to be coming from the same phase, otherwise the P readout will be wrong, since the voltage and current are shifted 120 or 240 degrees. That is, each current sensor will have to have a matching voltage sensor on the matching phase. Since this meter only has one voltage sensor it is a single phase meter.
